Tasty Tuesday: Meatless Rice Dish

Compliments of Kraft Foods online, the ever popular Meatless Rice Dish (AKA: One-Skillet Rice Dinners)! This is a favorite of mine and *most* of The Clan will eat it. It's fast, it's simple, it's filling and it's even better reheated...which is pretty amazing in my book! There are 4 different versions of this dish which you can find in the link above, but this is by far the favorite around here! (This is our edited version of the dish of course)

Meatless Rice Dish

Prep/Total Time: 15 min.
Serves: 4

-2 cups instant white rice
-1 can red kidney beans, drained
-1 jar chunky salsa
-1 cup water
-1/2 cup chopped green pepper
-1/2 cup chopped onion
-1 cup shredded cheese

1. Cook the rice following the directions on the box.

2. Add in beans, salsa, water, green pepper and onion - mix.

3. Cook on medium heat until heated through - stirring every once in awhile.

4. Add cheese, allow to melt. (sometimes we will mix the cheese in so the kids don't fight over it

5. EAT!

We like tortilla chips as a side. The kids use the rice dish as a "dip".
